CRANBERRY ICE-CREAM

Cranberry is a great source of many vitamins and antioxidants. It's one of the popular and most liked berry.

Using this berry in ice-cream is a fun and really relishing. My family loved it to the core.

Sharing this super yum recipe with you all hoping you and your family will love it too.


INGREDIENTS
1 cup cranberry
1 cup water

1/2 cup sugar
1 cup heavy or whipping cream
1/2 cup milk

For Natural pink colour:
1 grated beetroot

METHOD
1. In a vessel add water, cranberry and sugar. Cover and cook for 2 minutes.

2. Open the lid and cook on high to medium flame till it water reduces and it becomes soft.

3. Blend it to make coarse paste. Keep aside to cool it down.

4. Take heavy cream and whip till soft peaks are formed.

5. Add milk and whip again.

6. Add room temperature cranberry paste. Mix well.

7. Freeze or for giving natural pink colour grate beetroot squeeze out the juice and add in it. Freeze till set and firm, serve chilled.

3. Uncover and cook










4. Look how it has doubled in size.






5. Once little water is left, turn off the flame and blend.











6. Make coarse paste and not fine.











7. Whip cream till soft peaks are formed.











8. Add milk. Whip again.










9. Add cranberry puree.











10. Grate beetroot.










11. Squeeze out it's juice.










12. Add in cream.










13. Freeze and enjoy chilled.













 14. Scoop and serve.

PIZZA NO-BAKE CUPS / PIZZA CUPS


These mini pizza cups are very simple and quick to make specially if don't want to work with oven. 

They serve as a perfect starter for any kind of party or get-together whether its kids birthday party or kitty party or evening tea party or pack in kids school lunch box. 

I have provided both the option with and without oven. So next time if you have any kind of get-together do try this and get all the appreciation and wows!


Serves: 15-20 mini cups
INGREDIENTS 
1 medium sized chopped onion
1 medium sized chopped tomato
1 small sized capsicum

1/2 cup grated cheese (processed or mozzarella)
1/2 tsp salt
1/2 tsp mixed herbs of oregano
1/2 cup softened butter
1 tbsp tomato sauce

METHOD:

IN APPE PAN: 
1. Mix together onion, tomato, capsicum, cheese, salt, oregano and sauce.

2. Trim the edges of bread slices. Take small glass or cookie cutter and cut it in round shape, which should fit in your appe pan cavities. Here it is important to first cut the one circle and check whether it fits in the appe cavity and then go for more to avoid any hassle.

3. Roll the bread with rolling pin and apply butter on both the sides of bread.

4. Keep in pre-heated appe pan. Now add filling in the bread cups. Add extra cheese on top. Cover and cook on low flame till crispy and crunchy this will take around 5-10 minutes.

5. Remove and enjoy.

IN OVEN:1. Pre-heat oven at 200�C and place these cups in muffin moulds and bake for 10-15 minutes or till it becomes crispy.

6. Top with more cheese.

8. After 10 minutes, cheese is melted and it's nice crisp from bottom.

JAMUN JUICE / JAMUN DRINK / BLACK PLUM JUICE / BLACK BERRY JUICE

Jamun, a summer fruit, is full of iron, folic acid, potassium, calcium. Vitamin A&C are found in abundant in this tiny fruit. It helps in increasing hemoglobin count, relieves constipation, arthritis, acidity.

My kids don't like to eat Jamun so am I. 

I find it very difficult to swallow because of its typical trait. Neither I like it's taste. But when nature is giving you it's blessing in abundant you don't want to disregard it. Something like this happened with me. 

I have a Jamun tree near my house and my domestic helper got a bag full of it with huge smile.

I remember having falsa juice since childhood, after looking at Jamun first thing struck me was falsa juice, and I gave jamun the same try and trust me it tasted heavenly.

But here is one very important suggestion specially if you are going to make this drink for kids, do sieve the pulp.

The best part comes when your children likes it too and ask for more. If I am not wrong 80% of jamun from that tree was consumed by my family ;)

So what are you waiting for try these yummy, refreshing and appetizing jamun juice today!!!

INGREDIENTS
20-30 Jamuns or 1/2 cup chopped jamun
2 tbsp sugar

1/2 tsp black salt
2-3 mint leaves (optional)
2 glasses water
some ice-cubes

METHOD
Blend all the ingredients. Add water and sieve it. Add ice-cubes and enjoy!! Don't forget to sieve the pulp.

3. Strain by adding water in puree.













4. Sieve it as fine as possible. 

 5. This is what you will get.

MANGO ICE-CREAM

Mango season is incomplete without ice-cream. It's injustice not to amalgamate king of fruits with king of dessert...hahaha... 

Though you can do justice with mango by making Royal Mango shake, Mango  pudding, Stuffed Mango ice-cream, No- bake mango cheese cake and many more.

But a perfect blend of mango with ice-cream is truly divine which kids love to its core.

There are many ways of making mango ice-cream but this one is the most easiest and creamy. In this recipe I have used whip cream but those who don't have equipment to whip the cream can follow my quick mango ice-cream recipe. 


INGREDIENTS
1 cup whipping or heavy cream
1 cup mango puree
1 cup chopped mangoes

1/2 cup condensed milk
1/2 cup milk

METHOD
1. Peel the skin of mangoes and blend to get 1 cup mango puree. Keep aside.

2.  Chop mangoes to get 1 cup and keep aside.

3. Whip heavy cream till soft peaks are formed.

4. Add mango puree and whip again. You can reserve 1/4 cup to make swirl on top as I did.

5. Add condensed milk and milk, whip. Add some chopped mangoes and mix.

6. Transfer in bowl, make swirl or just spread some mango puree on top and freeze.

7. Freeze for 8-9 or till firm. Serve chilled and enjoy summers.
